This article details a practical experience with liquid water cooled below its freezing point. When disturbed, the water turns into ice within a matter of seconds. It's called supercooling, and occurs when molecules in the pure water cannot fuse together.
He's converted the videos (as per last visit, I'm going to write him so maybe...) to a format that won't play on my Mac (and probably on yours, if it does let me know in a comment!) but the information is interesting all the same!

Try using VLC from http://videolan.org to play the videos. They should play just fine with it.
